About the event
We at Well Kneaded have always been about sourdough pizza, but we’ve also
always been about sustainability- for us the two were always inextricably linked.
Sustainabilty is a bit of a buzz word, and we all know you can’t do it all at once, so
we started where we were and took one step at a time. It started with organic veg
and high welfare meat and has now grown to exploring how we integrate otherwise
‘waste products’ into our menu, fermentation of veg and milling some of our own
flour.
Since we launched in a food truck in 2011, we have been juggling and trying to
balance the real tension of producing something delicious for people to eat whilst
actually minimising our impact on the planet and maximising our impact on local
people. It’s not been easy, and we are still in the depths of exploration, and expect
we will be for some time to come, but we have learnt loads along the way and we are
really excited to share some of our findings with you.
So, what exactly can you expect from the evening:
As ever with sustainability things are subject to change depending on winds, rains,
farmers, etc but the below should give you a really great idea:
Exploring sustainability set menu
A glass of Vermouth made in house with British botanicals
5-8 Antipasti starters
(lacto ferments, gnocchi, house-milled bread with virgin butter.)
Seasonal Salads
A selection of exciting pizzas
(think game from the Wyken estate, aged pork
charcuterie from Tempus, wild garlic…)
Ice cream sandwich
(an even more sustainable take on our loved classic)
And/or House pie
So now all that is left is for you to get your friends and family along and choose a
time to come.
